Our take on a Mojito - clean, fresh and delicious


50ml Salcombe Gin 'start point'
2 barspoons blood orange marmalade
10ml lemon juice
10 mint leaves
Elderflower Tonic 


  • Place the gin, blood orange marmalade, lemon juice and clapped mint into a boston shaker glass
  • Fill to the top with ice, and shake vigorously  for 10 seconds
  • Fill a high ball tumbler with ice and add a thin wheel of grapefruit against the inside of the glass
  • Using a hawthorne strainer and a fine strainer, pour the mix into the highball
  • Finish by filling to the top with elderflower tonic and garnish with a sprig of mint
